It is not that straight forward on setting the language unfortunately

should return user locale settings when user exists
should return the locale specified by the cookie
should not use geo ip if autolocale not set

  1. So basically, if your onboarding a standard connect or express connect where they have a login and they specify their preference on their dashboard, the onboarding form will show that language chosen by them
  2. if there is no logged in user like custom or the logged user has no preference, it loads the language from the cookie where user switch the language on the onboarding form. that preference is saved on the local cookie
  3. if 1/2 are not set, it will by default using the GEO IP automatically show the relevant languages

So the short answer is that: no, there is no good way to fix a language; you should just let Stripe decides what to show your customer.
