you can workaround it by providing a custom UI before creating a checkout session, if user select different payment mehtod, you create a different checkout session with different total price and payment_method_types

not from Checkout no. You can build your custom checkout form using Stripe Element too but that is more work. https://stripe.com/docs/payments/accept-a-payment?platform=web&ui=elements
