👋 Yep, the target_date param https://docs.stripe.com/api/payment_intents/create#create_payment_intent-payment_method_options-sepa_debit-target_date can be set to specify the payment date
And in relation to the timing of triggering the payment, this doc https://docs.stripe.com/payments/sepa-debit#timing gives some info on this, but in short, you would want to trigger the payment at least 6 business days before the desired date to be sure it will be processed in time
