For some payment methods we support both csv and json:
https://docs.stripe.com/get-started/data-migrations/export-file-formats#:~:text=We export ACH%2C SEPA%2C BACS%2C and PADs/ACSS as a CSV. We can also export card data in both CSV and JSON formats.

Do you know if it's possible to export a sub-set of customers? I like to be able to only migrate after a given creation date.

For old customer no, you can't filter on creation date

You can for example use a date on your integration, update the corresponding customers Id in stripe and add a metadata to identify them
