Ok, I can see what you are talking about. Let me investigate this for a moment...
I am still investigating but it seems like it's really a wrong doc. Looking at the code, it seems like it's the exact opposite from what the doc states. When a subscription cancels it is indeed immutable except metadata and cancelation_details
I will flag that with the appropriate team so we get this fixed.

sorry one more question: is it possible to find out if it always was possible to update canceled subscription's metadata or it is relatively recent change?

The metadata has been explicitely allowlisted last year. So it's already in place for a little bit
