I'm wondering if I disable prorations, that price changes will only apply at the next payment instead of immediately.
Yes, that's correct. The next renewal would happen at the new price for the new period, without any prorated credits/debits.

Note that when using billing_mode=classic that switching recurring intervals (eg, monthly to yearly as you mention) would cause the billing cycle anchor to reset to the current time and that new annual period would be invoiced immediately.

Ah awesome! And with the flexible billing, with prorations disabled, if the customer changes their interval half way through the month, that means the customer would still have their full Jan 1 - Feb 1 month, before the annual period starts from Feb 1 (since that's when the new payment is taken?), if I understand correctly?

I think that's right, though I would encourage you to test your flow with Test Clocks to make sure this works like you expect in terms of invoice timing and amounts
