Here is an example I was able to find on Shopify where the address was not selected immediately and instead was prompted to select an address. I was able to see all my addresses and unsupported ones were highlighted with the ability to add a new address

About your 2nd inquriy, I'm afraid that I don't see an option to prevent google pay from loading the default address.
