Generally I expect you would need to use this parameter when creating the Checkout Session to be offered the option to save the payment method via a checkbox

Ah, are you using the Stripe for Salesforce Platform app? We don't support those here because they have behavior that is different than integrating with the API by yourself.
You can reach out to Stripe Support and they can route you to get help with the Salesforce connector
