We don't have a QR version for Google Pay, and the Apple Pay QR version will appear in certain browsers

Ah, so it doesn't mention QR codes directly, but here's the doc that mentions browser support for various browsers: https://docs.stripe.com/elements/express-checkout-element#supported-browsers
But basically you'd want to set applePay and googlePay to always to get them to appear in as many browsers as possible
