What do you mean by
no way to see this on the connected account's UI
is this in your dashboard, their dashboard, connect embedded components ... something else?
How are you managing onboarding or collecting details?

I see alerts in "Actions required" under the platform's account
I generate an onboarding link and have the client (connected) onboard on Stripe's hosted onbarding
in this case, the company has 2 owners, one put their information, the other is the one thats supposedly triggering these errors
I'm 100% sure this account will go over 750k within a few hours of activity, which is why im trying to prevent distruptions in advance

You can get hosted onboarding to collect the eventually_due requirements too, by passing that in the collection_options[fields] parameter when generating the Account Link:

That will front-load the verification collection to everything expected to be required
it adds friction up front, but does address the case youre concerned about

do you know if once this eventually_due is triggered and goes to currently_due are payouts immediately blocked or how much time I have

Once it moves to currently_due you should see the current_deadline updated, too, which tells you how long you have.
After one of these potential requirements becomes required, it appears in both the eventually_due and currently_due arrays. If a requirement becomes required and its due date is before the existing current_deadline, the current_deadline changes to the corresponding threshold’s enforcement date.
Stripe typically disables payouts on the account if we don’t receive the information by the current_deadline. However, other consequences might apply in some situations. For example, if payouts are already disabled and the account is unresponsive to our inquiries, Stripe might also disable the ability to process charges.
