The "bank account" option is Link though and abstracted a way (you'd still see a card in the API). See https://docs.stripe.com/payments/link/instant-bank-payments for more details
My guess is that someone/something turned Link on in your account. I recommend you reach out to support to discuss the why/how and ask if it can be disabled at least: https://support.stripe.com/contact
