So if i want to calculate fees and pass it on the the customer, then I cannot use dynamic payments, right?

You can not use the Checkout product at least. You have to use PaymentElement to build a more complex flow where you ask them the payment method they want to use first with server-side confirmation https://docs.stripe.com/payments/build-a-two-step-confirmation
