However, only incomplete checkouts (e.g., abandoned or unfinished payments) from one specific shop appear under "Transactions" in the Stripe dashboard as incomplete.
Ideally, two Checkout Session Ids... one incomplete but not visible in the dashboard and another incomplete and visible in the dashboard

This event is from a shop where incomplete payments do NOT show up in the dashboard as incomplete. This specific payment was completed, which is why I can find it:

Between the recommendation is to use Separate Stripe Account for each business/website:
