when you request the bacs_debit_payments you can set the default value of settings.bacs_debit_payments.display_name = Stripe -> https://docs.stripe.com/payments/payment-methods/bacs-debit#request-capability
or you enable it later through the dashboard settings -> https://docs.stripe.com/payments/payment-methods/bacs-debit#custom-branding
