it's an interesting question! I can't think of any issues with this, although I've never heard of someone doing it. we limit accounts to 16 webhook endpoints per mode (live / test) but as long as you're removing the old one, I don't see why this wouldn't work

to be safe / if possible I would make sure the new one is created before starting to delete the old one, just to ensure full continuity of deliveries
