What's odd is that the Capture was successful as we got a webhook for it but the HTTP request failed for the client that initiated it

yes unfotunately this can happen sometimes, and is documented here: https://docs.stripe.com/error-low-level#server-errors
which mentions:
You should treat the result of a 500 request as indeterminate.
and when a 500 error happens, you should use webhook events to know if the request suceeded or failed
