that's not possible directly I'm afraid, when you enable email receipts in your settings, that setting applies to all successful payments where an email address is present

the workaround for this would be to disable the setting and then either set up your own email receipts or use a third-party plugin, to give you more control over which types payments receive receipts

ah, this is a common enough question but unfortunately can't really be controlled from the Stripe side

#

within the Wallet app, these pieces of merchant info are pulled from Apple's own mapping system, rather than any data that Stripe sends (such as the statement_descriptor etc)
