e.g. when I click on the payment method I see both of these:
One says a different list of currencies and customers than the other but I am confident it actually appears in more than just the USD currency that one of them is saying for example (e.g. GBP)

Yes the absolute list I can tell my customers of which currencies and which customer location each payment method (that I have enabled) they can expect

And this applies for stripe connect accounts too?
and why does it say e.g USD only in the screenshots i shared within the stripe connect dashboard if that is not the case?
You want to see the 'currency & country support' section for that

the first screenshot looks like the general settings page - you might have connected accounts in different countries, for example, and that looks to me like all the currencies supported by Klarna
But some payment methods have restrictions on the location of the business and/or customer, as well as currency

paypal on stripe connect
we can't seem to get it to appear, but the other ones we can!
it doesn't show paypal in the stripe connect payment methods section
but in the link you shared it says it is possible?
our account or the stripe connected account?
our main platform stripe account is US yes, then we have connected accounts ofc from different countries
Depends on the integration - what is your funds flow
Direct charge
then your connected account's location is the operative one
but I can't even see the paypal option at the top level connected account payment methods section, like where i see everything else
in neither of these sections when i click "edit settings"
