I think you're referring to the "Successful Payments" email
I have it disabled, but still my customers get Link reciept emails.
The emails come from notifications@link.com
Probably, then, it is either governed by the customer's settings in their own link account - there is a setting for transaction receipt emails there, or else potentially something that's subject to a regulatory requirement
but as far as what you have control over in your Stripe integration, the dashboard setting that you've screenshotted is the only setting for receipt emails that exists, as far as I know
Is it possible to know if the customer used Link from the Elements or on the webhook?
Yes - you can look at the PaymentMethod - either the type will be link or card.wallet will be link
