Ive setup checkouts for our 2 fixed price options
but am not sure how to setup a dynamic-price subscription checkout for our Enterprise option where pricing will be customized to the needs of the customer

So it sounds to me like you'll be discussing with your Enterprise customers how much the price will be for their Subscription is that right?
And you're trying to understand how to set up a Subscription based off some negotiated (agreed) upon pricing with the Customer?

and how do you expect your customers to pay? Will they be paying on your site as well? Or you're expecting to send an email / invoice to them to make payment?
It feels like what you're looking for may be either :
- a Quote : https://docs.stripe.com/quotes
- or you'll want to create a page explicitly for that customer to login and navigate to pay : https://docs.stripe.com/billing/subscriptions/build-subscriptions

They would need to create some kind of internal UI for your Sales team to use.
