If you're using Stripe SDK, the API version pinned to the SDK will take precedence over the default API version on your Stripe account
If you wish to upgrade the default API version on your Stripe account in a Sandbox, this can be done in the "Overview" page in the Workbench
Open Dashboard > Click "Developers" button at the bottom left" > Click "Overview" under Workbench section
You will then see "API versions" section about upgrading the API
