Unfortunately, China is not a supported country by Stripe: https://stripe.com/global

Stripe global availability

Once Stripe is supported in your country, you’ll be able to accept payments from customers anywhere in the world.

How come in the docs it says we can enable Alipay and WeChat?

Can the app be built and launch in the US with Chinese translation. The stripe account is US based but accept WeChat and Alipay?

Alipay and WeChat Pay can be accepted for Chinese customers outside of China. This means the Stripe accounts must be a non-China (like US) account to accept Alipay and WeChat Pay payments from Chinese customers

so for example we can use our own stripe account to escrow for a China base customer … enable these payment methods

As long as the Stripe account is in the supported countries of Alipay and WeChat Pay, then their payments can be accepted
