ok, looking into this now
i would recommend taking a look at this page, it's really useful for guidance on collection requirements. you can see for individuals you can provide either a URL or a product description
business_profile.url
- Must be a reachable, unique URL that describes the account's business.
- If the user cannot provide their url, you can provide business_profile.product_description instead.
so if URL isn't applicable you can use product description instead

which account type are you using here? standard, express, custom, or controller?
and if controller what controller config are you using?

It was done using the Stripe Dashboard
here's an example of me running through the onboarding workflow in test mode for an individual. you can see that they have the option to provide a product description here
