For example, the 'Recent activity' panel is awesome and probably does a lot of work under the hood to massage data from many sources. I would love to recreate that within our own tooling, but figured I should check if that API exists first:

I'm afraid there is no API or embedded components for Stripe Dashboard features. I'd recommend sharing your feedback to Stripe Support https://support.stripe.com/contact, so that they can share with the teams for future considerations.

For the "Recent activity", similar approach can be built by using Webhook events. Your system can subscribe to the related events and build the history according to these events
