Oh though now I'm seeiing that we don't have an option for leaving the subscription as-is
Would these settings apply to all payments from that customer or in general?

I"m stepping in as my colleague had to go. These are general billing settings. We do not allow customer-specific configurations for retry policies.
You can turn off retries for all customers using the settings my colleague pointed out
But you will need to indicate what status the Subscription and Invoice transition to
Yeah, so to set the retries to null, select the custom retry policy
And then don't create any retry rules
