you would need to cancel the existing subscription and create a new subscription with the new customer and payment method.
So, there's no intermediate option ?
Also, what if the subscription is past due, can the debt be transferred to the new subscription ?
I don't think that is would be correct to do this from a accounting perspective (but I can't advice on that obv.) but the Update a subscription API does not have a parameter for customer. So it's not an option anyways.
The debt can't be transferred either since the payment obligation lies with the customer.
Okay, would there be a way to generate an invoice for an existing subscription with a different customer then ?
Or maybe a way to duplicate an existing invoice into a new subscription ?
No, the Invoice for a subscription will always be towards the customer assiociated with the subscription

Duplicating an invoice will still include the same customer. When duplicating it only small changes are allowed like credit notes etc. https://support.stripe.com/questions/duplicate-an-invoice
