No that's not customizable on Checkout
You could consider building your own checkout page with elements so that you can control the verbiage

Yes I mean that you cannot achieve what you want by using stripe checkout where you redirect to a hosted page
If you need to control/change the "subscribe to" verbiage, you have to use your own checkout page
