No, it's not possible to rename that button to "authorize" or something custom.

The button customization is limited with Stripe hosted Checkout surface.

but why it say "Pay" .. this will not be paid only authorized it is misleading and customers will probably cancel that checkout session.

It says "Pay" because you're placing a hold on the payment method and can capture it anytime after the customer goes through the flow.

If you need granular control over the UI then you should build your own using Stripe Payment Element
