The list invoice API doesn't support sort customisation by the fields, including finalized_at. The response will always be sorted by creation date

is this something that's possible with the search API?
I guess not, I don't see finalized_at in the list of fields the search API allows invoices to be searched on
and it doesn't seem to have a concept of sorting the search results.

Sorting by fields are not supported in all Stripe APIs
I'd recommend listening to invoice.finalized event and save the timestamp to your own database. You can then search within your database when needed
