From the API docs, it doesn't look possible. Looking at the api calls through the stripe dashboard, it looks like it's using the timezone key. I'm wondering if there's any specific reason for not allowing timezone and currency to be set?

I don't believe this is possible, the timezone is set by the merchant settings. But I'll look into it a bit now
It looks like the dashboard supports this, but the API doesn't currently support this. I'll add your feedback for our internal tracker to hopefully get that feature implemented
