Ok, I see the confusion. You using unset as a value for the billing_cycle_anchor. unset is not a valid value for a billing_cycle_anchor. You can only use "now or unchanged. https://docs.stripe.com/api/subscriptions/update#update_subscription-billing_cycle_anchor

i even put in a timestamp and that doesn't work either
what im trying to do is change the anchor date to the 1st
right now it's 2nd of the month
what is the best way to do that?

Correct, the billing_cycle_parameter in billing_mode: "classic" only accepts the two values now and unchanged
