What is the context for these receipts? Individual payments or invoices/subscriptions? Broadly speaking, you have control this via description on the payment as explained: https://docs.stripe.com/payments/advanced/receipts#automatically-send-receipts

Automatically send receipts and paid invoices.

By receipts I am referring to the email the user is sent after they make a donation. They can make a one-off payment, or a recurring donation, but both would need to show as a donation, on the receipts and in any invoices

Also, just to reiterate, we are using gravity forms

When you say you are using Gravity Forms, does that mean you are not creating the Invoice or Payment Intent yourself?
