To test with apple pay, you'll want to add a real card to your apple wallet on your device.
When going through the payment flow, using test-mode keys, stripe will discard your real card information and instead use our 424242 visa test card information to test the Apple Pay flow.
You'll then see a Payment Method attached and the Payment Succeed

It frequently begins it's life without a Payment Method attached.
