What Stripe surface are you using to collect payment method details?
Like are you using Stripe Checkout? If so, you can look at - https://docs.stripe.com/payments/checkout/free-trials?payment-ui=stripe-hosted#free-trials-without-payment-method
If you're using Payment Element + Subscriptions API then you should be able to create a Subscription with trial without needing a payment method attached to the customer.
To handle no payment methods after trial expires, you can listen to customer.subscription.trial_will_end webhook event which is fired prior to trial ending and check if the customer has a payment method saved, if not then you can handle it the way you'd like in your integration
