I can confirm that PIZZA DEPOT is the descriptor sent to the network
Unfortunately, banks can display whatever they want (or think they should) on their surfaces. Banks displaying incorrect information on the statement descriptor is, sadly, a common issue.

what can we do about it?
Very little, unfortunatey. Your customer can report it to their bank if they will. You can also attempt to report it to them, though I can't imagine that would be easy to do.
The most Stripe can do is make sure we're sending the correct descriptor to the network
