Would you be able to create the webhook endpoint using the Stripe API? If yes, you can define the API version that the webhook endpoint should use: https://docs.stripe.com/api/webhook_endpoints/create#create_webhook_endpoint-api_version

But I can't advice which API version you should upgrade to because that would depend on your payment integration. Your development team should review our changelog and see what's suitable: https://docs.stripe.com/changelog

The default version for Stripe account can only be upgraded to our latest version. If you want other version, you'd need to contact Stripe Support
