Boost, Touch'n Go and not payment methods supported by Stripe. so it's expected you don't see them in your Checkout Session.
GrabPay is supported by Stripe, looking into this.

no, you would need a different Stripe account.

You mentioned Touch'n Go is not supported.. but it is listed here: https://stripe.com/in/payments/payment-methods

this is what we call an "external payment method", so not something we directly support.
if you used the Payemnt Element, and wrote some custom code, then you would be able to accept payments with Touch'n Go. you can learn more about this here: https://docs.stripe.com/payments/external-payment-methods.
but since you are using Checkout Session, this is not relevant for you.
