Ive had it before that i just take the platform fee of 10% for example but stripe takes away (it seems like) 2,9% service fee and 30ct for card payment which when selling a 1 Euro plant makes me (the platform) loose money. So ig the only way would either be to set a min price for a plant of 5 Euros or let the seller pay the whole fee thing -> This results in the issue im having calculating the correct price that includes the fees from stripe which differ for country and payment method selected.
So im not sure what to do

There's unfortunately not a good way to estimate Stripe fees today. As you noted, they vary by certain factors. Checkout Page can't update dynamically as such..
We don't know a ton about fees on this server unfortunately. I'd suggest talking to our support team about that. They can help figure out if there's a better way to handle this
