I'm not sure what you by "pull the Card Name" but what you are describing sounds like incremental authorizations (running a tab). We document that approach here: https://docs.stripe.com/payments/incremental-authorization
You can save the Payment Method without charging the customer, track the amount owed yourself, and then charge when you close the bill. We document this kind of approach (save now, charge later) here: https://docs.stripe.com/payments/save-and-reuse
