I think customer_mapping is pretty self-explanatory. It's the field that represents the cus_xxx ID that the meter is for. You can rename that as you want

value_settings allows you to customise the key sent that maps to the usage 'value'. So by default when you report usage you pass value: 100 but you can use value_settings to change that to tokens_used or whatever
