if you prefer a low code solution, you can use Stripe Checkout with manual capture https://docs.stripe.com/payments/accept-a-payment?platform=web&ui=stripe-hosted#auth-and-capture
my issue is that i will only know the ammount that needs to be captured once I've reviewed the quote and told the customer how much it will be - they then need to authorise the quote and then i can take the payment.
but you can auth without knowing the amount

placing a hold on a PM means that you want to insure that the amount you need is available and no one else has access to it

you won't be able to make the hold until they accept the quote
