That approach would work but result in a large number of prices, as you point out. Another approach you might consider (although the Invoices might look a little odd) is to have a Price with a currency step (e.g. $1 per unit) and then set the quantity to whatever the customer chooses

No, just licensed pricing where the quantity * price amount. You could have a price with unit_amount: 10 and then use that as a basis to allow users to configure the price in 10c increments, as an example
i.e. $10 would be quantity: 100 * unit_amount: 10
As my colleague said, the invoice(s) would look weird but saves you having to use adhoc pricing and complexities that come with that
Checkout has native support for 'pay what you want' models but unfortunately it wasn't extended to recurring payments
