Is there any way to disable or override this full-screen Stripe-provided UI and instead display a custom UI of our own while still using the Tap to Pay functionality?
No, the terminal screen will always be a full screen represntation. Your ability to customize this appearance is limited to what we describe here: https://docs.stripe.com/terminal/payments/setup-reader/tap-to-pay?platform=android#device-specific-nfc-tap-zone-ui
We describe this situation here:
When your application is ready to collect a payment, the Stripe Terminal SDK takes over the display to handle the collection process
