How can I schedule my customers’ current subscriptions to cancel at the end of their billing period without Stripe automatically emailing them about the cancellation?
I'm not sure we even send that kind of email?
You don't send a email when there is a cancellation?

You can trigger customer emails in test mode: https://docs.stripe.com/billing/revenue-recovery/customer-emails#test-your-configuration
So that should help you prove/disprove that
e.g. create a sub with an email address that matches those conditions, use a test clock and configure it to cancel at period end
