I initiate the Elements provider with mode subscription and amount 0

There's an Apple Pay API you can utilise to configure that is displayed there: https://docs.stripe.com/apple-pay/merchant-tokens?pay-element=ece#add-apple-pay-merchant-tokens
Not supported for Google Pay though
the docs say 0 is valid to account for coupons and free trials
interesting, but is there actually a $1 charge? I don't see it happen on Stripe Checkout with a free trial
the first one is stripe checkout, the second one is express element

Can you share the exact params you pass when you init the Elements group? I can't reproduce here โ I get a $0 Google Pay dialog when mode: 'subscription' and amount: 0

Worth looking at this though. You can customise the Apple Pay dialog to display exactly what/when they'll be charged after the trial
