Ok, so looks like you haven't enabled a payment method that allows your to accept payments in AUD

I loaded the connected account in question and they have "card" and others enabled. I can confirm it via the Dashboard access. Normally I would agree with you, but this account isn't following the usual pattern. I can even give you a payment intent request that worked (with the same parameter set).

This one worked: req_CqmmRFgXDnj4Yk (same account from the previous one) - if you can't find anything odd, part of me is thinking that something must have changed in their account in between both calls, but I don't know how to see if that happened.

We agree on that, on my end (given this charity came to us about "the donation form not working") it's the first time I've seen this and we've been online for 7 years and I've used the Stripe API for even longer.

No, that account has several, but they sort of stop. This is the last one that failed: req_EG1QSBJvYbSpLs and the first one that worked: req_CqmmRFgXDnj4Yk. I will do one transaction there now (real one with real money).
