Hi 👋 sorry, but I won't have insight on why that feature is only available in the US, nor why our product designers didn't provide checkboxes as an option for those custom fields. But I'll file feedback with our teams indicating you're interested in seeing that support expanded and additional custom field types added, for them to consider that as they consider future improvements to implement.
Regarding your third point, can you clarify which version of our SDK you're using, since I don't see a version 1.12.0 in the list of releases for our stripe-dotnet SDK:

No luckily we're using the official SDK - version 48.2.0-beta.2
