Hello. The FX Quote API is very new (still in Preview) and, because of this, it is not supported across all Stripe APIs. This means you currently cannot pass the FX Quote when creating a Checkout Session
For currency coversions with Stripe Checkout, we recommend Adaptive Pricing

Yeah, unfortunately we cannot use Adaptive Pricing as we display localised prices to customers already and have no way to fetch Adaptive Pricing's fx rate upfront.
This would mean, while checkout, a customer might be presented with a different price than the one shown on the cart page, due to the spread between our localized pricing based on fx quotes and the rate Adapative Pricing is using.

I'm not seeing anything definitive so I cannot offer any guidance on when such a feature would come out. However, I strongly suspect this is something we will be introducing.
