Ok, so the default country is determined by the IP address of the person on the checkout page.

To test it out, use a VPN and change the country to UK. Create a new Checkout Session and navigate to the page, the billing address should be United Kingdom.

ok; will do. thank you for the information! just out of curiosity that means there's no way to override it? i could also see an argument to have the address info pulled from the linked Customer record.
