Stripe accounts have a default settlement currency based on the country where they are domiciled in. Payments collected by that account will settle in their settlement currency.
You can use Stripe Connect to link with multiple separate Stripe Accounts, each with their own default settlement currency and linked bank account.
Connect is a big topic and we have a large number of docs on the subject.
But essentially I think that would be a way you could achieve this outcome.
Connect would allow you to
- Create PaymentIntents on specific accounts as determined by the currency your customer selects
- Have the funds settle in that currency and get paid out to a bank in that currency
- Allow you to achieve this with a single API key using Stripe Connect Authentication
